An excursion to a Cajun Village is filled with Acadian humor by the tour guide. He is quite funny describing how he grew up in Vacherie and fishes, hunts, and now does a tour business.

Brian is joined by his two friends to help us learn to cook Jambalaya and then eat for lunch. Before we start, we are given a lesson on how to catch crawfish. Quite funny!
All the ingredients have been prepped for us making it easy. We pair up and cook in special cast iron pots over a small table top burner. The objective is to cook it until your spoon stands up in the pot and then simmer another 20 minutes.










Once our spoon is standing, we are free to explore the buildings around the property that make up the Cajun Village. Every Louisiana kitschy thing you could possibly ever want to buy or maybe not!






And of course, an alligator for those people who always wanted to see one!

Back at the house where we did the cooking, our Jambalaya is done and is delicious. Dessert is a beignet made in the coffee shop in the village.




This was as fun as the New Orleans cooking school and now I have a proven recipe to try at home.
